Soft Boiled Gourmet Eggs breakfast recipe - gluten free

This was amazing and also so pretty to look at. Decided I wants my egg soft boiled this morning, accompanied by some fried chilli, garlic, red onion, fresh coriander & silverside (which I never actually buy or use but we had some leftover in the fridge). You could use bacon / ham / chicken / beans.. Whatever..

For the perfect soft boiled egg - bring water to the boil and add your eggs, time at exactly 4 minutes then remove from heat and drain boiling water. Add cold water and some ice cubes to the saucepan to cool the eggs and leave to cool down while u prepare the rest of the meal.

I fried up the rest of the stuff in some rice bran oil and then served with some avocado slices and once the egg was peeled and sliced open (half way to let the yolk out) I added some black pepper and spring onions / eschallots to garnish.

Serve with toast or gluten free bread if you like, I'd already had a fresh made fruit juice before this so didn't need it.

Delicious 'McDonalds' tasting healthy burger patties/rissoles recipe -gluten free

I experimented with this one and it turned out to be a completely surprising taste bud explosion. After the first bite I said to my partner "This tastes like McDonalds"! We both then tucked in greedily and were left quite satisfied and smug looking. Tasty tasty tasty...

Now for you to try it - adjust recipe according to people served. I served 2.

250g lean beef mince
1 x dill pickle
2 x anchovies (if you like them)
Veggie Salt / Black Pepper / Garlic Salt
1 egg
Worcestershire sauce
1Tbs rice bran or olive oil
Fresh or dried parsley

1) beat egg & oil in bowl until combined.
2) add one large pinch veggie salt, a dash of black pepper, a couple of shakes of garlic salt (could use minced fresh garlic instead) & parsley - mix in well.
3) finely dice one large pickle & anchovies and mix into the mixture.
4) finally add the mince and mix thru all ingredients until well combined.
5) heat some more oil in a pan and when hot, add the mixture in dollops and flatten slightly with a fork. Once slightly cooked, add a dash of worcestershire to the top of each one .
6) After a few mins, flip the patties over and cook the other side until nicely browned on both sides. Cut one open to check if cooked through.
7) serve with a salad or bread or whatever you like. I used a 4 leave mix salad with some chopped walnuts & fresh lime juice (the best salad dressing), and a few cherry tomatoes.
8) Nom it all down.

Chicken breast, pumpkin & pinenuts recipe - gluten free

For this dish I fried up some chicken breast, pinenuts, cottage cheese & a little bit of basil pesto (add enough cottage cheese to give a creamy saucy texture) I used 100% natural coconut oil and a dash of sesame oil in the pain, no more than one TBS. boil pumpkin first, until soft, then mash and mix into fry pan. Once all cooked, serve with fresh spinach, clean, healthy & delish!

Creative Capsicum Egg Rings

This morning I cooked eggs with a difference. Take a large capsicum and cut into rings, removing all the inner bits. Sit rings in frypan and crack an egg into the middle of the ring. If any egg spills out, you can trim it off once it has cooked. Garnish with pepper and fresh coriander :)

Sweet chilli & mustard steak with green fried rice

For the steak, I marinated with A teaspoon of hot English mustard, some fresh coriander & a tablespoon of sweet chilli sauce. Mix together, rub the steaks in it.

My green fried rice consisted of fried garlic, asparagus, broccoli & zucchini with pre-cooked brown rice, I also added soy sauce, ginger & parsley.

It was delish!!

Quick Healthy Breakfast

Cooking breakfast is really not that time consuming. You can cook a delicious healthy meal that is perfect to start the day with...

Choose an egg and some of your favorite veggies. Preheat frypan with a dash of rice bran oil while u chop your veg and chuck them in the pan as you go. Once veg are cooked through, put on a piece of toast & crack your egg into the pan.

By the time the toast is done your egg should be done, put veg & egg onto the toast. Enjoy :)

All up this should take under 10min, and is so much better for you than a bowl of processed serial or toast with butter & spread.

Eating to gain muscle & lose fat...

I've started a new workout & diet program to lean up and gain a bit more muscle. I plan on sticking to it as well as possible but also altering the meals in various ways to keep the food interesting :)

For fat loss it is recommended to eat 5-6 small meals per day, instead of 3 larger ones, which helps to increase your metabolism and constantly keep your body fueled with the right nutrients.

Here are 2 meals I have eaten today, which are quick to prepare, surprisingly tasty, and oh so good for you! I also spent an hour in the gym doing upper body weights today :)

I know I said in an earlier blog post that I'm not a fitness model, and I don't really want to be either, although I would like to increase my muscle mass and lose a bit of fat for a leaner, more toned and healthy appearance.

I still plan to allow foods I love into my diet, however they will be slightly less frequent. I always try to eat healthy, this eating plan is about eating the right foods at the right time of the day, specifically suited to your body type, which is great!
